Ingredients
- 12 lasagna noodles, uncooked
- 1 pound sweet Italian sausage
- 1/2 pound hot Italian sausage
- 1 large onion, sliced
- 2 sweet red peppers, sliced
- 2 sweet yellow peppers, sliced
- 2 green peppers, sliced
- 3 cloves garlic, chopped
- 1/2 cup chopped fresh parsley
- 1/8 tsp. pepper
- 1 (8-ounce) can tomato sauce
- 1 (6-ounce) can tomato paste
- 4 cups (16 ounces) shredded part-skim mozzarella cheese
- 1/4 cup grated Parmesan cheese

Step 1
Cook lasagna noodles according to package directions, drain well, and set aside.
Meanwhile, remove and discard casings from sausage. Cook sausage in a large skillet over medium heat is browned, stirring until meat crumbles; drain. Add onion, sliced peppers, and garlic; cook over medium heat until vegetables are tender, stirring occasionally. Add parsley and pepper.
Combine tomato sauce and tomato paste; stir well. Spread half of tomato sauce mixture in a lightly greased 13x9x2-inch baking dish. Layer 4 lasagna noodles, half of sausage mixture, 1 cup mozzarella cheese, and 1 Tbsp. Parmesan cheese. Repeat noodle, sausage, and cheese layers. Top with remaining 4 lasagna noodles; spread remaining tomato sauce mixture over noodles. Top with remaining 2 cups mozzarella cheese; sprinkle with remaining 2 Tbsp. Parmesan cheese. Bake, uncovered, at 350 degrees for 40 to 45 minutes. Let stand 15 minutes.
