- use food processor to shred cheese to very fine consistency
- let cheese warm to room temperature before combining w/ remaining ingredients
- process mixture to almost the color of carrots - pulse on and off
- If using cookie press, microwave dough in 10 second increments to soften

  • 8 oz extra sharp cheddar cheese, grated
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp cayenne

Step 1

Preheat oven to 350 degrees. In a food processor combine cheese and butter; pulse until combined. Add flour, salt and cayenne. Process until a crumbly dough forms. You should be able to press a handful of dough and have it hold together.

Fill barrel of cookie press w/ dough. Pipe dough onto ungreased shiny cookie sheet, about 1" apart. Bake for 20 minutes. Remove from oven. Sprinkle w/ salt and paprika while warm. Let cool on pan. Use a spatula to remove.

Store in airtight container up to a week. Baked cheese straws can be frozen. Thaw at room temperature before serving.
