Ingredients

  • 1/2 lb boneless salt cod, soaked
  • 1 lb small new potatoes
  • 2 red bell peppers, seeded and diced
  • 1/2 cup green olives, pitted
  • DRESSING
  • 6 tbsp EVOO
  • 2 tbsp red wine vinegar
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/4 cup fresh flat leaf parsley

Preparation

Step 1

Drain the cod and place in a saucepan with water to cover. Bring to a gently simmer over medium heat and cook until tender, 10-15 mintues. Drain and when cool enough to handle, shred, removing any bits of skin and small bones. Place in large bowl.

Meanwhile, combine the potatoes with water to cover, bring to a boil until tender but still firm enough to hold their shape when diced, about 20 minutes. Drain and when cool enough to handle, peel and cut into 1/2 inch dice. Add the potatoes, bell peppers, and olives to the salt cod.

To make the dressing, whisk together the olive oil, vinegar, cumin, and paprika. Season with salt and pepper. Pour the dressing over the salt cod mixture and toss well. Garnish with parsley and serve.
