Ingredients

  • 2 C. all purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 C. butter, softened
  • 3/4 C. sugar
  • 2 eggs
  • 3 very ripe bananas, mashed (1 1/2 C.)
  • 1 tsp. vanilla extract
  • 1/2 C. chocolate chips
  • 1 C. chopped pecans (optional)
  • Cooking spray

Preparation

Step 1

1. Preheat oven to 350 degrees.

2. Coat muffin pan cups or loaf pan with cooking spray.

3. In a medium bowl, combine flour, baking powder and salt. Set aside.

4. In large mixing bowl, combine butter and sugar. Using an electric mixer, beat on medium speed, creaming together, for 2-3 minutes or until fluffy.

5. Add eggs, bananas, vanilla. Beat until smooth. Using wooden spoon, stir in flour mixture until just combined. Stir in chocolate chips and nuts.

6. Scrape batter into prepared pan. Bake for 50-55 minutes or until golden and pick inserted into center comes out clean. Cool in pan for 5 minutes.
