Ingredients
- 1 C. sugar
- 1 C. finely shredded zucchini
- 1 egg
- 1/4 C. cooking oil
- 1/4 tsp. finely shredded lemon peel
- 1 1/2 C. flour
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. ground nutmeg
- 1/4 tsp. baking powder
- 1/2 C. chopped walnuts

Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Mix sugar, zucchini and egg. Add oil and lemon. Mix well.
3. In separate bowl mix dry ingredients. Add to zucchini mixture. Gently add nuts.
4. Grease 8 x 4 x 2 loaf pan. Pour mixture into pan.
5. Bake for 55 to 60 minutes or until pick comes out clean. Cool in pan 10 minutes.
6. Remove from pan and cool. Wrap and store overnight before slicing.
