Ingredients
- 3 tbsp olive oil
- 2 russet potatoes, peeled and cut into shoestrings.
- salt and pepper

Preparation
Step 1
Preheat oven to 425 degrees.
Lightly coat 2 baking sheets with oil. Toss together potatoes, 1 tbsp oil and salt in a bowl. Arrange potatoes in a single layer over both sheets.
Bake, turning potatoes, until crisp, 18-20 minutes. Let cool 5 minutes on parchment paper, then season with salt and pepper.
