Grilled Chicken Breasts with Asian Dipping Sauce

Ingredients
- Dipping Sauce:
- 2 cloves chopped garlic
- 1/4 C granulated sugar
- 1/3 C soy sauce
- 1/3 C Asian fish suace
- 1/3 C lime juice
- 1-2 jalapeno peppers, thinly sliced crosswise
- 2 T chopped scallion greens
- 2 T chopped cilantro
- 2 T chopped mint
- 1/4 C finely chopped unsalted dry roasted peanuts
- 1/2-3/4 C water
- Chicken:
- 4 large boneless chicken breasts halves
- Salt & pepper

Preparation
Step 1
Finely chop garlic & sprinkle with 1 T of sugar to form paste. Place in med bowl & add remaining 3 T sugar, soy sauce, fish sauce & lime juice & whisk til sugar is dissolved. Stir in jalapenos, scallions, cilantro, mint & peanuts. Stir in enough water to create mellow but zesty sauce.
Salt & pepper chicken breasts & grill 4-6 min per side. Let rest on cutting board 5 min. Slice chicken thinly & serve with dipping sauce.
