Ingredients

  • 8 ripe apricots (about 2lbs) halved & pitted
  • 1 T EVOO
  • 1/8 t salt
  • 1/8 t freshly ground pepper
  • 2 pts good-quality vanilla ice cream
  • 1/4 c honey (optional)
  • 1/2 c sliced almonds, toasted (optional)

Preparation

Step 1

1. Prepare grill or heat a cast iron grill pan over high heat on a stove.
2. In a med bowl, toss together apricots, EVOO, salt & pepper.
3. Grill apricots, cut side down, until marked & beginning to soften, ~ 1 minute.
4. Flip & cook ~30 sec on the skin side until marked.
5. Remove from grill.
6. Serve 4 warm apricot halves/bowl w/1c ice cream.
7. Drizzle w/honey & sprinkle w/toasted almonds.
