  • 2-6oz packages corn bread mix
  • 1 cup milk
  • 1 egg, beaten
  • 1-4.5 oz can chopped green chiles, undrained
  • 1 cup shredded Monterey Jack cheese
  • 1 jalapeno pepper, chopped (optional)

Step 1

1. Preheat oven to 450 degrees. Grease 14 muffin cups or spray w/ non-stick cooking spray.

2. In large bowl, combine corn bread mix, milk and egg; stir until smooth. Stir in green chilies, cheese and jalapeno.

3. Fill muffins cups 3/4 full. Bake about 15-20 minutes or until golden brown. Serve Warm
