- TOMATO BASE:
- 1/4 CUP OLIVE OIL
- 1 LARGE ONION OR 2 MEDIUM ONIONS (SWEET) (DICED)
- 1 GREEN PEPPER, (DICED)
- 3 TOMATOES (DICED)
- 1/2 CUP CARROT (DICED)
- 2 14OZ CANS TOMATO SOUP
- 2 14OZ CANS OF MARINARA SAUCE, YOUR CHOICE
- 2 4 OZ EVAPORATED MILK
- CHICKEN BASE:
- 1 TABLESPOON CHICKEN BASE
- 1/2 TEASPOON OREGANO OR 1 TEASPOON PARSLEY
- 1/4 TEASPOON PEPPER
- 1/4 TEASPOON GARLIC POWDER
- 1/4 TEASPOON CRUSHED RED PEPPER (OPTIONAL)
- SMALL PINCH CINNAMON
- 1 CUP PARMESAN CHEESE
- CROUTONS AND MOZZARELLA CHEESE, AS NEEDED

Preparation
Step 1
HEAT OLIVE OIL IN POT. SAUTE ONIONS, GREEN PEPPERS, TOMATOES AND CARROTS. WHEN TENDER, ADD TOMATO SOUP, MARINARA AND MILK. ADD CHICKEN BASE. ADD ANY REMAINING SPICES.
BRING TO A SLOW BOIL. TURN DOWN TO MEDIUM HEAT AND SIMMER FOR 10 - 15 MINUTES. ADD CHEESE AND STIR WELL.
SERVE WITH CROUTONS AND CHEESE ON TOP AND PLACE IN THE OVEN FOR A COUPLE MINUTES TO MELT CHEESE IN BOWL.
