  • 1/4 CUP OLIVE OIL
  • 1 LARGE ONION OR 2 MEDIUM ONIONS (SWEET) (DICED)
  • 1 GREEN PEPPER, (DICED)
  • 3 TOMATOES (DICED)
  • 1/2 CUP CARROT (DICED)
  • 2 14OZ CANS TOMATO SOUP
  • 2 14OZ CANS OF MARINARA SAUCE, YOUR CHOICE
  • 2 4 OZ EVAPORATED MILK
  • CHICKEN BASE:
  • 1 TABLESPOON CHICKEN BASE
  • 1/2 TEASPOON OREGANO OR 1 TEASPOON PARSLEY
  • 1/4 TEASPOON PEPPER
  • 1/4 TEASPOON GARLIC POWDER
  • 1/4 TEASPOON CRUSHED RED PEPPER (OPTIONAL)
  • SMALL PINCH CINNAMON
  • 1 CUP PARMESAN CHEESE
  • CROUTONS AND MOZZARELLA CHEESE, AS NEEDED

Preparation

Step 1

HEAT OLIVE OIL IN POT. SAUTE ONIONS, GREEN PEPPERS, TOMATOES AND CARROTS. WHEN TENDER, ADD TOMATO SOUP, MARINARA AND MILK. ADD CHICKEN BASE. ADD ANY REMAINING SPICES.
BRING TO A SLOW BOIL. TURN DOWN TO MEDIUM HEAT AND SIMMER FOR 10 - 15 MINUTES. ADD CHEESE AND STIR WELL.
SERVE WITH CROUTONS AND CHEESE ON TOP AND PLACE IN THE OVEN FOR A COUPLE MINUTES TO MELT CHEESE IN BOWL.
