Ingredients

  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup wild rice, rinsed and drained
  • 2 bay leaves
  • 2/3 cup orzo
  • 1 cup corn
  • 1/3 cup couscous
  • 15 ounces kidney beans, canned, rinsed and drained
  • 1 cup cottage cheese
  • 4 ounces green chiles, drained
  • 1 1/2 teaspoons chili powder
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/4 cups lowfat cheddar cheese

Preparation

Step 1

1. Boil 3 quarts water. Add onion-bay. Cover. Let boil 20 mins.

2. Add orzo. Cover. Boil 10 mins.

3. Add corn. Cover and boil 3 mins.

4. Add couscous. Cover and boil 2 mins. Let stand 5 mins.

5. Heat oven to 375.

6. Drain ingredients in pot, remove bay. Transfer to sprayed casserole. Add beans-chilies. Add chili powder-s&p. Add cheese.

7. Bake 30-35 mins.
