Ingredients
- Fruit:
- 1 T. butter
- 1 c. brown sugar
- 1 pt. fruit (pineapple, peaches, bananas, apples, or just about anything)
- Cake:
- 1 c. sugar
- 3 T. butter
- 1 egg
- 1/2 c. milk
- 1 1/2 c. flour
- 2 tsp. baking powder

Preparation
Step 1
In iron skillet, melt (do not cook) 1 tablespoon butter and 1 cup brown sugar. Arrange fruit of your choice on top of sugar mixture. In a bowl, cream 1 cup sugar and 3 tablespoons butter. Add egg, milk, flour and baking powder. Pour over fruit in skillet and bake 30 minutes at 350 degrees, or until it tests done. Let stand on cooling rack 5 minutes and turn onto cookie sheet or plate. Careful, hot juices may spill.
