Ingredients

  • 2 tblsp olive oil
  • 1 cup chopped onion
  • 2 (28oz) can crushed tomatoes
  • 1/2 cup finely chopped fresh basil
  • 1 1/2 teas salt, divided
  • 2 teas ground black pepper, divided
  • 1 lb ground beef, cooked and drained
  • 1 (16oz) pkg shredded mozzarella cheese
  • 1 (15oz) container whole milk ricotta cheese
  • 1/2 cup grated parmesan cheese, divided
  • 1 (8oz) box cannelloni shells, cooked according to package directions

Preparation

Step 1

In a dutch oven, heat olive oil over medium high heat. Add onion, and cook for 4-6 minutes, or until tender. Add tomatoes, basil, 1 teas salt, and 1 teas pepper; bring to a boil;reduce heat,a nd simmer, stirring frequently, for 45 minutes.

Preheat oven to 350. Spray a 3 1/2 quart baking dish with non stick cooking spray.

In a large bowl, combine ground beef, mozzarella cheese, ricotta cheese, and 2 tblsp parmesan cheese, remaining 1/2 teas salt, remaining 1 tea pepper, and 4 tblsp sauce mixture. Stuff cannelloni with meat mix, and place in a single layer in prepared baking dish. top with remaining sauce mix. Sprinkle remaining parmesan cheese evenly over sauce. Bake for 30 minutes, or until hot and bubble. Let stand for 10 mintues before serving.
