Ingredients

  • 3/4 pound onions
  • 2 3/8 cloves garlic, minced
  • 1/8 cup olive oil
  • 112 ounces Italian plum tomatoes, with juice
  • 1 1/4 tablespoons dried basil
  • 1 1/4 tablespoons dried thyme
  • 3/8 tablespoon salt
  • 3/8 tablespoon sugar
  • 3/8 teaspoon pepper

Step 1

1. Saute onions and garlic in stock pot in oil until just soft. Add remaining ingredients, bring to a boil, reduce heat. Partially cover and let simmer 2 1/2-3 hours, stirring occasionally.

2. Strain through a food mill to remove tomato seeds and skins (if using fresh tomatoes). f you prefer a thicker sauce, simmer uncovered for another 30 minutes, stirring occasionally.

This was okay as a base, and got better with some additions: adding a can of tomato paste, more garlic, about 2 tbsp brown sugar, lots of extra basil. Also upped the herbs and used marjoram instead of thyme, and then added in a bit of thyme. Sauteed the onions and garlic and then simmered in the crockpot all day. Not the best sauce by a long shot, but probably worth tinkering with some more.
