Chicken and Almond Wild Rice 1 Picture

Ingredients

  • 2 large cloves of garlic ( I use more)
  • 1 tabl. Dijon Mustard
  • 1/2 teas. salt
  • 1/4 tabl. pepper
  • 1/4 tabl. Rice Wine vinegar
  • 1/3 cup vegetable oil
  • 4 cups cooked wild rice ( I use 2 phg. Quiggs White and Wild Rice Mix)
  • Juice of 1/2 lemon
  • 1 whole chicken breast, cubed ( I use 3 halves boiled in chicken broth)
  • 3 scallions
  • 1/2 red pepper chopped
  • 2 oz. snow peas ( I steam lightly)
  • 1/2 european cucumber, seedless and diced
  • 1 cup toasted pecans

Preparation

Step 1

ook Rice according to pkg. directions and let cool. Add garlic, dijon, pepper, vinegar, oil, lemon, salt and stir. Add chicken and stir. Then add remaining ingredients.

*I serve slightly cooled or room temperature
