Chicken and Almond Wild Rice

Ingredients
- 2 large cloves of garlic ( I use more)
- 1 tabl. Dijon Mustard
- 1/2 teas. salt
- 1/4 tabl. pepper
- 1/4 tabl. Rice Wine vinegar
- 1/3 cup vegetable oil
- 4 cups cooked wild rice ( I use 2 phg. Quiggs White and Wild Rice Mix)
- Juice of 1/2 lemon
- 1 whole chicken breast, cubed ( I use 3 halves boiled in chicken broth)
- 3 scallions
- 1/2 red pepper chopped
- 2 oz. snow peas ( I steam lightly)
- 1/2 european cucumber, seedless and diced
- 1 cup toasted pecans

Preparation
Step 1
ook Rice according to pkg. directions and let cool. Add garlic, dijon, pepper, vinegar, oil, lemon, salt and stir. Add chicken and stir. Then add remaining ingredients.
*I serve slightly cooled or room temperature
