Ingredients

  • 2 tbsp oil
  • 4 large eggs
  • 2 cloves garlic
  • 1 bunch scallions
  • 12 oz sliced pastrami
  • 6 oz sliced smoked turkey
  • 6 c cooked white rice
  • 1/2-1 tbsp soy sauce

Preparation

Step 1

Heat 1 tbsp oil in a large skillet over med-high heat, lightly beat eggs and add, stirring constantly. Remove from pan and chop into small pcs, set aside. Heat remaining 1 tbsp oil in skillet. Add chopped scallions and garlic. Add shredded pastrami and turkey and saute until scallions are tender. Remove from heat. Strir in rice and reserved egg mixture. Stir in soy sauce to taste.

** I use any kind of deli meat I have in my house, not only pastrami and turkey. Also, I don't use oil (I use Pam spray).
