Curried Chicken Salad Sandwiches

Very good; ate at Susan's. Can eat as chicken salad side dish on a plate rather than as sandwich.

Ingredients
- 2 Granny Smith Apples, peeled, cored, and diced
- 2 ribs celery, diced
- 1 medium-sized carrot, peeled and finely chopped
- 3/4 cup golden raisins
- 2/3 cup reduced-fat mayo/dressing
- 2 Tbs. Dijon mustard
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 1/2 pounds cooked diced chicken breast
- 2 tsp curry powder
- 1 loaf good bread (homemade or french loaf)
- 1 head green leaf lettuce, washed and patted dry.

Preparation
Step 1
In large bowl, lightly toss together the diced apples, celery, carrot, and golden raisins until well mixed.
In small bowl, whisk together the mayo, mustard, salt and black pepper until well blended
In a small dry skillet, toast the curry powder over high heat, stirring occasionally, until fragrant, about 2 minutes. Stir toasted curry powder into mayonnaise mixture.
Add the chicken along with the curry-mayo mixture to the apple mixture; gently fold together with a rubber spatula until all ingredients are evenly coated. Refrigerate until serving time.
To serve, make sandwiches with the chicken salad, lettuce and bread
