Cream Cheese Wontons with Spicy Dipping Sauce

Ingredients
- For Sauce:
- 1 lb cream cheese, room temperature
- 2 ounces fresh green onions, finely chopped
- Salt and pepper to taste
- 1 egg lightly beaten with a tsp of water
- 18 wonton wrappers
- As needed oil for frying
- 6 ounces soy sauce
- 3 ounces mirin
- 3 ounces seasoned rice wine vinegar
- 4 ounces cane sugar (if not available use raw sugar)
- 1 tsp fresh cilantro, rough chopped
- 1 tsp fresh green onions, rough chopped
- For Garnish:
- 6 tsp fresh cilantro leaves, chiffonade
- 1 ounce crushed chili flakes

Preparation
Step 1
In a bowl, mix the cream cheese with the green onions until the mixture is soft. Season with salt and pepper. Egg wash the edges of the wonton wrapper with a pastry brush. Fill the center with cream cheese, and fold each corner to the center and seal together. Deep fry wontons at 375 until golden brown, drain on paper towel lined plate.
To make the sauce, combine all ingredients in a saucepan and heat to boiling, simmer over medium heat for 10 minutes; strain and set aside to cool.
Place the wontons on a serving dish. Place sauce in a small ramekin and garnish with chiffonaded cilantro and crushed chili flakes.
