Ingredients

  • 6 c very warm water
  • 1 c instant potato flakes
  • 2/3 c oil (safflower, veg or olive)
  • 2/3 c honey
  • 4 c flour
  • 3 TBS wheat gluten
  • 2 TBS sea salt
  • 3/4 c raw pumpkin seeds
  • 3/4 c raw sunflower meats
  • 2 TBS each sesame seeds, poppy seeds and flax seeds
  • 3 TBS yeast

Preparation

Step 1

Place all ingredients in your mixer equipped with dough hook.
Mix on a medium speed until combined. Let mixture "rest" for 25 minutes. Then add freshly milled wheat flour, 1 cup at a time, untile dough begins to clean from sides of bowl. Add enough flour to make a soft workable dough, not too sticky, but not heavy and tough. Knead for 6 minutes on a medium speed. Turn dough out onto a clean oiled surface and form loaves. Put into greased loaf pans. Brush tops of loaves with egg wash and sprinkly with mix of seeds. Cut 2 diagonal slashes in top of loaves. Let rise for 3-45 minutes or until puffy and risen over top of pans. Bake at 350' for 25-35 minutes. Remove from pans about 5 minutes after removing from oven. Let cool completely.
