Ingredients
- Vanilla Bean Cake:
- 1 cup butter
- 2 cups sugar
- 2 scraped vanilla beans
- 4 eggs
- 3 cups AP Flour
- 1 tbls Baking Powder
- 1 tea baking soda
- 1 tbls kosher salt
- 1 1/4 c buttermilk
- Lemon Curd:
- 5 oz lemon juice
- 3 eggs and one yolk
- 3/4 c sugar
- Pinch of salt
- 8 oz Butter
- Blood Orange Marshmallow:
- 300 g castor sugar
- 70 g blood orange juice
- 105 g invert sugar
- 28 g gelatin powder
- 66 g water
- 70 g blood orange juice
- 150 g invert sugar

Preparation
Step 1
1. Vanilla Bean Cake: Beat butter, sugar and vanilla pods on medium till light and fluffy. Add eggs 1 at a time. Add the dry mix alternating with the buttermilk in 3 batches. Bake at 325 for about 20 minutes.
2. Lemon Curd: Whisk everything except butter over simmering water. Whisk till mixture “ribbons” (180 degree F) take off heat and whisk in butter little by little. Let cool to set up. Then pipe in the center of the cupcake
3. Blood orange marshmallow: Cook the first 3 ingredients to 110c. Bloom gelatin in the water and melt in microwave. Pour over remaining ingredients in a mixer bowl. Add the hot syrup and mix to 40 degrees Celsius then spoon into piping bag and pipe on top of cupcake
