Ingredients
- 2 pounds chicken
- 1/4 cup seasoned flour (1 tsp salt and pepper)
- 3 tablespoons olive oil
- 1/2 cup onion -- diced
- 1/2 pound mushrooms -- sliced
- 1 teaspoon ground thyme
- 1 teaspoon sugar
- 1/3 cup calvados (or apple juice)
- 3 medium tomatoes -- chopped
- 2 tablespoons fresh parsley or green onion -- chopped
- juice of half a lemon

Preparation
Step 1
Dredge chicken in seasoned flour (1/4 cup flour, 1 teaspoon salt and 1/2
teaspoon pepper, and ground thyme) and saute in hot oil until golden on both sides. Add
onions, mushrooms, sugar, tomatoes and Calvados. Cook slowly, covered 30-40
minutes until chicken is done and tender. Remove chicken to platter, squeeze lemon juice over it and sprinkle with parsley and/or green onion.
