Ingredients

  • 4 cups dry pinto beans
  • 1 tsp garlic powder, optional (to "de-gas")
  • Water
  • 3 Tbsp chili powder
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp ground cumin

Preparation

Step 1

1. Triple rinse beans, then:
Soak beans overnight in pot with 8-10 cups water. Discard water in morning, and rinse the beans. Or Quick soak beans in Instant Pot: rinsed beans + 8-10 cups water; Cook for 2min pressure; release pressure; strain & rinse beans)
2. Cover soaked/rinsed beans with 6-8 cups of fresh water, or as needed. Cook the beans with the “Bean/Chili” setting at high pressure for 30 minutes.
3. Skim off any foam from top, discard. Strain off most of the water from beans, save to add back to beans if necessary.
4. Mash beans. Add chili powder, salt, garlic powder & cumin. Mix well. Add reserved bean liquid until beans are consistence desired.
