Ingredients

  • 2 tablespoons olive oil
  • 1/2 large onion, diced
  • 1 clove garlic, minced
  • 1 1/2 pounds chicken breast halves, diced
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1 cup corn, frozen
  • 1 large red bell pepper, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup salsa
  • 1 cup minute rice
  • 1 can black beans, drained
  • 2 cups monterey jack cheese
  • Optional: cilantro, chopped green onions, sour cream,

Step 1

In a large skillet, over medium-high heat, heat the oil and add the diced onion, minced garlic and the chicken pieces. Stir until chicken is beginning to turn white. Add chili powder, cumin, corn, red peppers, salt and pepper. Stir in chicken broth and salsa. Add rice; stir, cover and simmer on low for 15 minutes. Remove lid, ad black beans and stir. Sprinkle cheese over rice, cover and let set 5 minutes. If desired, sprinkle with cilantro or chopped green onions and/or sour cream.
