Ingredients

  • 2 pounds chicken breast -- boneless, skinless
  • 2 tablespoons olive oil
  • 1/4 cup flour
  • salt
  • pepper
  • 1 can diced tomatoes -- drained
  • 8 ounces sliced mushrooms
  • 2 cloves garlic -- minced
  • 1 teaspoon basil -- dried
  • 1 tablespoon fresh parsley (optional) -- chopped
  • 1 tablespoon honey
  • 1/4 cup wine

Preparation

Step 1

Brine chicken for two to three hours. Drain and pat dry. Dredge in
flour. Cook garlic in oil for about two minutes then brown chicken in hot
oil, about 5 minutes per side.

Add mushroom and cook until brown. Add wine and deglaze pan. Add
tomatoes, celery, honey, and spices. Bring to a boil.

Turn heat to simmer. Cover and cook about 20 minutes, until chicken is
tender. Remove lid and cook another 5 minutes or so. Season with salt
and pepper to taste.

Serve with whole wheat pasta.
