Chicken and Broccoli Stir-Fry

Ingredients

  • 1 tablespoon oil
  • 1 pound chicken breast, cut into strips
  • 4 cups broccoli
  • 1 1/2 cups chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 3/4 teaspoon ginger
  • 2 cups minute rice

Preparation

Step 1

Stir-fry chicken in hot oil in large skillet until browned. Add vegetables, cook and stir until tender crisp. Mix broth, soy sauce, cornstarch and spices; stir into skillet. Bring to boil; boil 1 minute. Meanwhile, prepare rice as directed on package. Serve chicken and vegetables over rice.

Note: May use any combination of fresh vegetables desired.
