Ingredients
- 5 slices of bacon
- 2 C shredded cheddar cheese
- 1 medium onion
- 6 C zucchini, sliced, not peeled if tender
- 6 fresh tomatoes or 1- 16 oz can of diced tomatoes
- 1/2 C brown rice, uncooked
- 1/8 t pepper

Preparation
Step 1
Layer half of zucchini, half of tomatoes, pepper, all of onion, all of rice, half of cheese and half of cooked and crumbled bacon.
Repeat with layers of remaining ingredients zucchini, tomatoes, cheese, bacon)
Cover and bake at 350 degrees for 1 hr and 15 minutes
