Ingredients

  • 4 tbs unsalted butter
  • 1/2 cup sugar
  • 1 tbs orange or lemon zest
  • 2 tsp vanilla
  • 2 large eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tbs milk
  • Icing
  • 2 cups confectioners sugar
  • 1 tbs melted butter
  • 3 tbs warm water

Preparation

Step 1

Beat butter until soft and light. Beat in sugar, zest and vanilla. Continue beating until very light 3-4 minutes. Beat in eggs one at a time. Mix flour and baking powder and add half slowly to butter mixture, add milk and mix and then add remaining flour. Dough will be sticky. Drop by spoonful onto parchment lined baking sheet. Bake at 350 for 15-20 minutes until golden and fairly firm. Cool briefly.
Mix icing ingredient till desired consistency. Can add food coloring if desired. Dip or brush icing onto cookies. Let dry and set up on wire racks.
