I remember watching Alvin and the Chipmunks when I was little and I remember that Theodore was on a game show and the winning questions was if there was coffee in coffee cake. That was the first time I had heard of coffee cake and then I felt so smart that I knew there wasn’t coffee in coffee cake! Ha Ha! Well, ever since then I have loved coffee cake. And this is one of my new favorite ways to make it!

Cinnamon Streusel Coffee Cake 0 Picture

Ingredients

  • Streusel
  • 2/3 cup original bisquick mix
  • 2/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cold butter or margarine
  • Cake
  • 2 cups original bisquick mix
  • 1/2 cup of milk
  • 2 Tablespoons of sugar
  • 2 teaspoons of vanilla
  • 1 egg

Heat oven to 375 degrees.
Spray the bottom of a 9-inch round cake pan with cooking spray.
In small bowl, mix ⅔ cup Bisquick mix, the brown sugar and cinnamon. Cut in butter, using pastry blender or fork until crumbly; set aside. In medium bowl, stir coffee cake ingredients until blended. Spread about 1 cup of the batter in pan. Sprinkle with about ¾ cup of the streusel. Drop remaining batter over top of streusel by teaspoons. Spread carefully over streusel. Don’t spread the batter all the way to the edge because you want the cinnamon sugar on the edges. Sprinkle remaining streusel over top and spread as even as you can.
Bake 20 to 24 minutes or until golden brown. Let stand for a few minutes before you serve it.
