Ingredients

  • 2 eggs
  • 2 Tbsp. water
  • 2 Tbsp. each finely chopped fresh coriander (cilantro) and red onions
  • 1/4 tsp. each cumin seed, and red chili powder or cayenne pepper
  • 2 slices whole grain bread
  • 1 Cracker Barrel Medium Light Cheddar Cheese Slice
  • 2 tsp. non-hydrogenated margarine

Preparation

Step 1

Whisk eggs and water until blended. Stir in coriander, onions and seasonings.

Heat small skillet sprayed with cooking spray on medium heat. Add egg mixture; cook 3 to 4 min. or until almost set, occasionally lifting edge with spatula and tilting skillet to allow uncooked portion to flow underneath. When egg mixture is set but top is still slightly moist, slip spatula underneath omelette, tip skillet to loosen and gently fold omelette in half. Slide or flip omelette onto plate; fold in half again.

Fill bread slices with omelette and cheese. Spread outside of sandwich with margarine. Return to skillet; cook 3 min. on each side or until golden brown on both sides.
