Tangy, cheesy version of chicken and rice. Can also be baked in hollowed out green peppers.

Ingredients

  • 1 Tbsp. margarine
  • 1/2 cup chopped celery
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 1 envelope instant onion soup mix
  • 4 cup cubed chicken
  • 3 cup hot cooked rice
  • 1 tsp. lemon pepper seasoning
  • 1-1/4 cup shredded cheddar

Preparation

Step 1

In a large pan, melt margarine over medium heat.
Add celery and cook for 5 min.
Stir in cream of mushroom soup, broth and dry onion soup mix. Heat until bubbly.
Stir in chicken, heat through.
Stir in rice and remove from heat.
Place in a baking dish and sprinkle with lemon pepper seasoning.
Cover with foil.
Bake at 350 F. for 25 mins.
Sprinkle with cheese.
Bake, uncovered for 5 more min.
