I requested this recipe from Peggy after she made it for a Community Bible Study Christmas brunch in December 2009. The recipe is from her aunt in South Carolina.

Ingredients

  • 1 12-ounce box vanilla wafers
  • 1 cup powdered sugar
  • 1 cup coconut
  • 1 cup chopped nuts
  • 1 6-ounce can frozen orange juice (undiluted)
  • additional powdered sugar

Preparation

Step 1

Allow orange juice to thaw. Crumble wafers (fine) and add 1 cup powdered sugar, coconut, nuts and orange juice.

Shape into small balls and roll in the additional powdered sugar. (I shake the balls in the sugar using a plastic bag).

Chill. May also be frozen. You may want to roll the balls in a little additional powdered sugar just before serving.

(I save any left-over powdered sugar in the bag along with the refrigerated or frozen snowballs for additional dusting if needed.)
