Ingredients

  • 1 cup, flour
  • 2 Tbs. sugar
  • 1 1/2 tsp., baking powder
  • 1/2 tsp., salt
  • 2 eggs, slightly beaten
  • 1 1/4 cups, milk
  • 3 Tbs. melted shortening or oil

Step 1

Combine first four ingredients. Combine eggs, milk and shortening. Stir into dry ingredients. Mix until moistened. Pour 1/4 cup of the batter into a well greased, hot frying pan and tilt pan so batter covers pan and is very thin. Cook until top bubbles and side edges are dry and bottom is lightly browned. Turn and cook until brown on other side. Lay pancakes between wax paper, otherwise they will stick or sprinkle with powdered sugar. Blintz filling, any prepared pie filling and top with sour cream.
