Ingredients
- 2 ounces olive oil
- 2 onions, diced
- 3-4 stalks celery, diced
- 1 green pepper, diced
- 3 tablepoons garlic, minced
- 6 ounces French bread, crusts removed
- 1/2 cup milk
- 2 eggs, lightly beaten
- 1/2 teaspoon salt
- 2 tablespoons Kansas City dry rub (see recipe)
- 3 1/4 pounds ground beef
- 1 cup barbecue sauce

Preparation
Step 1
Preheat oven to 350 degrees.
In a large skillet over medium heat, heat the oil and then add the onions, celery, and green peppers and saute until tender. Add the garlic and saute for 1 minute more.
Place the bread in a large mixing bowl. Add the milk and mix thoroughly until smooth. Add the eggs, sauteed vegetable mixture, salt and the dry rub. Add the ground beef and mix lightly but thoroughly. (note: if the mixture is too thin, add plain bread crumbs).
Form into two equal loaves and place on a greased shallow baking pan or two 9 X 5 loaf pans. Coat each loaf with about 3 tablespoons of the barbecue sauce.
Bake in 350 degree oven for 40-45 minutes or until meatloaf is medium done, when meat thermometer reads 160 degrees.
Remove from oven and let cool for 15 minutes.
When serving, slice the meatloaf into 1 inch thick slices and baste with the remaining barbecue sauce.
