Oatcake

Good plain. Good with butter. Just good! I like mine on the sweet side, but they are also tasty unsweetened and served with cheese or other savory foods.

Ingredients
- 2 1/2 cup oatmeal
- 1/2 cup flour
- 1/4 cup packed brown sugar (or more to taste)
- 1/2 tsp salt (optional)
- 1/2 tsp baking soda
- 1 teaspoon cinnamon
- 6 tablespoons butter
- 1/2 cup non fat milk

Step 1
Mix dry ingredients. Cut in butter. Add milk and mix until it forms a ball of dough. Turn out onto parchment paper lined pan. Pat dough into a half inch thick round. Cut into wedges as soon as you remove from the oven.
Bake at 375 for 15 -20 minutes. A bit longer if you prefer your oatcakes to be crispy.
