Ingredients

  • 1 cup milk
  • 1/2 cup bread crumbs
  • 1 egg, lightly beaten
  • 1/2 onion, diced
  • 1 tablespoon olive oil
  • 1 garlic clove, diced
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground ginger
  • 1 pound ground sirloin
  • 1/2 pound ground pork
  • 1 cup shredded carrots
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Dijon mustard, for topping
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Step 1

Preheat oven to 350 degrees.

Combine milk, bread crumbs and egg in a large bowl. Set aside.

in a large skillet, over medium heat, saute onion in the oil until the onions are translucent, about 5 minutes. Stir in the garlic until blended. Add the curry and ginger and stir to blend. Remove from heat.

Add onion mixture to the bowl with soaked bread crumbs. Add meat, carrots, 1 teaspoon mustard, salt and pepper. Mix thoroughly until blended.

Place meat mixture in a 9 X 5 inch loaf pan and bake in 350 degree oven for 45-50 minutes or until meatloaf is medium done, when a meat thermometer reads 160 degrees. Let stand for 15 minutes before slicing.
