Ingredients

  • 4 chicken breast halves, boneless and skinless, pounded to 1/4-in thickness
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 4 Tbsp. oil
  • 4 Tbsp. butter
  • 1 cup fresh mushrooms, sliced
  • 1/2 cup marsala wine
  • Serve over fettuccine

Preparation

Step 1

Combine flour, salt, pepper and oregano and blend well. Heat oil and butter until bubbling slightly.
Dredge the chicken in flour and shake off the excess. Cook the chicken on medium heat for 2 min. on 1st side, until lightly browned. As you turn the breast to the 2nd side, add mushrooms around the chicken. Cook 2 min. until lightly browned. Stir the mushrooms, and add wine around the pan. Cover the pan and simmer for 10 min.
