Ingredients
- 8 cloves garlic, minced
- 1 tsp. oregano
- 1 tsp. paprika
- Salt and pepper to taste
- 1 (3-4 lb.) pork loin roast
- Vegetable oil
- 2 bay leaves
- Juice of 1 lemon
- 1/4 c. butter
- 2 large onions, sliced

Step 1
Preheat oven to 350 degrees. Mix 6 cloves of the garlic, oregano, paprika, salt and pepper. Coat the roast with oil and press the garlic mixture into the roast. Brown on all sides in a skillet. Transfer the roast to a roasting pan, reserving the drippings. Press the bay leaves on top of the roast and drizzle with half the lemon juice. Bake for 1-1 1/2 hours or until registers 160 degrees. Discard the bay leaves and cover loosely with foil.
Heat the butter and the remaining lemon juice with the pan drippings. Add the onions and last two cloves of garlic and mix well. Saute until the onions are tender; spoon over the roast. Slice and serve.
