  • PREHEAT OVER TO 350 DEGREES
  • MIST AN 8/1/2 BY 5" WITH COOKING SPRAY AND DUST WITH FLOUR, THEN SPRINKLE BOTTOM WITH 1 TABLESPOON PACKED LIGHT BROWN SUGAR.
  • 1 CUP UNSWEETENED APPLESAUCE
  • 1 CUP PACKED LIGHT BROWN SUGAR
  • 4 TABLESPOONS MELTED UNSALTED BUTTER
  • 2 LARGE EGGS
  • 1 TEASPOON VANILLA
  • 1 CUP ALL PURPOSE FLOUR
  • 1 TEASPOON BAKING SODA
  • 1/2 TEASPOON BAKING POWDER
  • 2 TEASPOONS CINNAMON
  • 1/2 TEASPOON NUTMEG
  • 1/2 TEASPOON SALT (IF i USE SALTED BUTTER, I WON'T USE THIS)
  • 1 PEELED, CORED AND CHOPPED APPLE
  • 1/2 CUP RAISINS

Step 1

IN A LARGE BOWL, WHISK TOGETHER UNSWEETENED APPLESAUCE, BROWN SUGAR
MELTED BUTTER, EGGS AND VANILLA.
IN A SEPARATE MEDIUM BOWL, WHISK TOGETHER FLOUR, BAKING SODA, BAKING POWDER, CINNAMON, NUTMEG AND SALT.
STIR INTO APPLESAUCE MIXTURE UNTIL JUST COMBINED. FOLD IN CHOPPED APPLE AND RAISINS.
POUR BATTER INTO PREPARED PAN AND BAKE UNTIL A TOOTHPICK INSERTED IN THE CENTER COMES OUT CLEAN.
BAKE 1 HOUR AND 15 MINUTES OR UNTIL DONE. COOL FOR 30 MINUTES ON WIRE RACK, REMOVE FROM PAN.
