Ingredients

  • 175 g butter
  • 2/3 cup caster sugar
  • 4 tbs cocoa powder
  • 2 tbs desiccated coconut
  • 1 egg lightly beaten
  • 1/2 cup pistachios shelled
  • 250 g milk coffee biscuits broken into pieces
  • Chocolate topping
  • 250 g dark cooking chocolate
  • 50 g butter

Preparation

Step 1

In a saucepan, melt the butter, sugar and cocoa over medium heat for 3 minutes or until the sugar has dissolved.
STEP 2 Remove from heat. Add coconut, egg, pistachios and biscuits and combine.
STEP 3 Press mixture into a baking paper lined 28 cm x 18 cm slab pan. Chill for 1 hour.
STEP 4 Melt butter and chocolate over simmering water. Spread over slice and place in the fridge to set for 20 minutes.
STEP 5 Slice with a hot knife.
