Ingredients
- 1 1/2 c. chopped tomatoes
- 1/4 c. chopped fresh basil
- 1/4 tsp. chopped garlic
- 2 Tbs. plus 1 Tbs. olive oil
- 1/4 tsp. dried oregano
- Pepper
- 4 boneless, skinless chicken breasts
- 1/2 c. mayonnaise
- 2 Tbs. balsamic vinegar
- 4 pieces focaccia (homemade if possible)
- 4 slices Swiss cheese
- 1 avocado, sliced

Preparation
Step 1
Heat the grill to medium high. In a bowl, combine the tomatoes, basil, garlic, 2 Tbs. olive oil, oregano, and pepper. Set aside at room temperature for at least 1 hours. Bresh the breasts with the remaining olive oil and grill until done.
In a small bowl, combine the mayonnaise with the vinegar. Slice each piece of focaccia in half horizontally. Toast lightly. Spread each half with the balsamic mayonnaise. Layer the chicken, cheese, tomato mixture, topping with the slices of avocado.
