Ingredients

  • 1 cup grated unpeeled zucchini
  • 1 cup sugar
  • 1 egg
  • ½ cup cooking oil

  • 1 ½ cups all-purpose flour
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp ground nutmeg
  • ¼ tsp baking powder
  • ¼ tsp grated lemon peel (or lemon juice)
  • ½ cup chopped walnuts

Preparation

Step 1

In mixing bowl beat zucchini, sugar, and egg together. Add oil; mix well. Stir together flour, cinnamon, salt, soda, nutmeg, baking powder, and lemon peel. Stir into zucchini mixture. Mix in nuts. Pour into a greased 8 ½ x 4 ½ x 2 ½” loaf pan. Bake at 325 until done, about 55 minutes. Cool in pan for 10 minutes; remove from pan. Cool loaf thoroughly. Wrap and store loaf overnight before slicing. (we never do that, but it will make it firmer)
