Ingredients

  • 1 lg Can of Clams, (2 1/2 C w/juice)
  • 4 to 5 Slices of Bacon
  • 1 lg Brown Onion (diced)
  • 3 to 4 TBLS Flour
  • 2 C Potatoes (diced)
  • 2 C Carrots (diced)
  • 1 C Celery Stalk (diced)
  • 3 to 4 TBLS Butter
  • 4 C Warm 1/2 & 1/2 Cream
  • Oyster Crackers

Preparation

Step 1

In a large stock pot cook bacon on medium. Cook until crispy, remove and set aside. Add diced onion, cook until onion is translucent, approx. 5 minutes. Slowly add flour and create a paste. Gradually pour in juice from clams (add water to make sure the liquid measures 4 C). Add potatoes, carrots and celery, cover and simmer until potatoes are done but still firm. Slowly pour in the 1/2 & 1/2 and thicken with flour/water mixture. Serve with oyster crackers.
