Ingredients

  • 1 lb smoked sausage (cut into 1/2" slices) I get the sausage at Costco. Louisiana Sausage
  • 1 lb Ground Beef
  • 1 med Green Pepper (chopped)
  • 1/2 Green Onion (chopped)
  • 5 Garlic Cloves (minced)
  • 1 28 oz Tomatoes (canned Do NOT drain)
  • Salt & Pepper to taste
  • 1 C uncooked long-grain rice (I use white rice)
  • 1 1/2 C Water

Preparation

Step 1

Cook sausage in dutch oven (large pot) until browned; remove sausage, and discard the drippings.
Add ground beef, green pepper, green onions, and garlic to dutch oven; cook until beef is browned. Drain off grease. Add tomatoes, salt, pepper, and sausage. Cover; simmer 20 minutes.
Add rice and water to meat mixture; cover and cook 25 minutes or until rice is tender.
