- 6 slices white sandwich bread
- 3 eggs
- 3 TB. milk
- 1/2 heaping cup chopped ham
- 1/2 heaping cup Swiss cheese, shredded
- 1 tsp. FOX POINT SEASONING (Penzeys)
- 1/8 tsp. BLACK PEPPER

Preheat oven to 325°. Spray 2 mini muffin pans with vegetable spray, set aside. Remove the crust from the bread. Cut each slice of bread into four squares. Press one bread square into each mini muffin cup. It will line the bottom and go up the sides slightly. Beat the eggs. Add the milk, ham, cheese, FOX POINT SEASONING, and BLACK PEPPER. Divide mixture evenly between the 24 muffin cups (about 2 teaspoons per mini quiche). Bake at 325° for 13-15 minutes or until eggs are set. The quiches will puff up during baking, but don’t be alarmed—they will sink slightly after removing them from the pans.
