Ingredients

  • 4 c very warm water
  • 1 c dry milk powder
  • 2 eggs
  • 4 TBS butter, very soft
  • 1/2 c sugar
  • 5 c flour
  • 1 TBS sea salt
  • 3 TBS yeast

Step 1

Place all ingredients in your mixer equipped with a dough hook.
Mix on a medium speed until combined. Then add more blour, 1 cup at a time, until dough begins to clean from sides of bowl. Watch closely to get just enough flour for a soft workable dough. Too much flour will result in a heavy dough. Knead for 5 minutes on medium speed. Turn dough out onto a clean oiled surface and divide dough into 4 equal parts. Let dough "rest" for 20 minutes. On a lightly floured surface, roll the parts of dough to 3/4" thick. Cut with a large biscuit cutter. Place rolls on greased baking sheets. Brush tops with egg wash and sprinkle with either sesame or poppy seeds, or French fried onion bits. Let rise for 1 hour or until nearly doubled in size. Bake at 350' for 10-15 minutes. Buns should be lightly browned on bottoms and tops.
