Ingredients
- 2 cups whole wheat pastry flour, chilled
- 1 tsp salt
- 3/4 cups butter, chilled
- 6-8 TB ice water

Preparation
Step 1
Combine flour and salt in a bowl. Cut the chilled butter into the dry ingredients until the mixture resembles coarse meal or pea sized pieces. Drizzle ice water over flour mixture, one TB at a time and knead lightly until a dough forms. Divide the dough into two disks. Wrap in plastic wrap and refrigerate for at least 30 minutes before rolling.
When dough is well chilled, place on a floured surface and roll out to 1/4 inch thick. Line a 9 inch pie pan pressing into the bottom and corners. Place the prepared shell back into the refrigerator while you make the filling.
Makes a two crust pie or two pie crusts.
