Ingredients

  • 2 Tbsp vegetable oil
  • 3 c chopped zucchini
  • 1 c chopped onion
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can ranch style beans
  • 1 can Ro-Tel tomatoes
  • 1 package taco seasoning mix
  • 2 c shredded cheddar
  • 8 oz cream cheese, softened
  • 1/2 c sour cream
  • 12 small corn tortillas

Preparation

Step 1

Preheat oven to 350. Spray a 9x9 pan with vegetable spray.

In a large skillet, heat oil and saute zucchini and onion 8-10 minutes. Stir in corn, black beans, ranch beans, diced tomatoes, and taco mix.

In a small bowl, combine 1 cup cheese, cream cheese and sour cream.

Layer 4 tortillas over bottom of pan. Top with half of veggie mix, followed by half of cheese mix. Place 4 tortillas on, add veggie mix and then cheese mix. Add last 4 tortillas. Sprinkle with 1 cup of cheese.

Bake 30 minutes or until hot and bubbly. Serve.
