Ingredients

  • Part 1. For the Bread
  • 2 Tbls olive oil
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/2 tsp fresh ground black pepper
  • 1 Tbl fresh rosemary, chopped
  • 16 slices fresh French bread cut on a diagonal
  • Part 2. the topping
  • 1/4 C good balsamic vinegar
  • 1/4 C olive oil
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 C tomatoes, seeded and diced
  • 1/3 C fresh basil, chopped

Preparation

Step 1

Part 1: For the Bread:

Combine olive oil, garlic, salt, pepper and rosemary.
Lightly brush bread on both sides with this mixture, grill each side for one minute (medium heat)

Part 2: the topping

Whisk together balsamic vinegar, olive oil, minced garlic, salt and pepper. Toss in tomatoes, mix well. Allow to set for at least an hour then spoon over prepared bread.

Sprinkle with fresh basil
