PESTO VEGGIE PANINI 1 Picture

Ingredients

  • ◾2-3 thick slices of onion
  • ◾Olive oil for brushing purposes
  • ◾2-3 thinly sliced zucchini
  • ◾9" herbed focaccia
  • ◾2 Tbs. roasted red peppers
  • ◾Herbes de provence
  • ◾Salt and pepper for taste
  • ◾1/4 lb. provolone cheese
  • ◾1/4 C. basil pesto

Preparation

Step 1

Brush both sides of the zucchini and the onion with olive oil
Season with herbes de provence, salt and pepper
Grill the pieces until lightly tender
Cut the focaccia into halves and remove part of the inner bread to make ample room for the filling
Spread pesto evenly on the inside of each halves of the bread
On the bottom half, place the cheese, onion, zucchini, and red peppers
And top the filling with the other half
Panini press the sandwich for 8-10 minutes until crispy and golden brown from outside and the Provolone has melted inside
