Ingredients
- 1 16 oz jar of whole dill pickles
- 1 C buttermilk
- 2 Tbls hot red pepper sauce (or to taste)
- 1 C all purpose flour
- 1 C yellow cornmeal
- 2 Tbls Cajun seasoning
- 4 C peanut or vegetable oil for frying
- salt

Step 1
Drain the pickles in a colander, then spread out on paper towels to drain completely.
Combine the buttermilk and hot sauce in a bowl.
In a separate bowl combine the flour, cornmeal and Cajun seasoning.
Heat the oil in a medium pot or fryer to 350 degrees.
Submerge the pickles in batches in the buttermilk, then dip in the flour mixture, toss to coat evenly. Shake in a strainer to remove any excess batter.
Add to the oil, in batches, so not to crowd, turning until golden brown and crisp, about 2 minutes.
Drain on paper towels and season with more Cajun seasoning or salt to taste.
Serve hot. Ranch salad dressing is great for dipping.
